Biography of Chef Alain Borel

Chef Alain Borel, a fourth generation chef from Avignon, France, began his career at the age of six, sometimes musing it was by proxy. The first chef in his family was his great grandmother. Alain was raised by his grandparents, who owned the Hotel du Louvre, in Avignon, which earned a two star in the Michelen Guide. Alain worked at the side of his grandfather, learning to peel and cut potatoes as his first assignment. He learned the details of the fine art of food preparation. His culinary talent began to take shape.

At the age of thirteen, Alain went to Canada to be with his parents who owned L’Auberge Provençale outside of Montreal. Alain continued his culinary education, this time at his father’s side. He started his full time career in the kitchen as chef when he was 14 years old. He was trained in the more classical cuisine in France and Canada. His roots from Provence shaped his cooking. Alain used much which was from the region, fresh herbs, olive oil, garlic, tomatoes, olives, vegetables, etc. and everything fresh, fresh, fresh!
Alain and his father then moved to the U.S. and opened a French Restaurant, Le Mistral, in Key West, Florida. Here he started using more tropical ingredients in his cuisine. At the age of 18, Alain left Florida and went to Sugarbush, Vermont, which he was the Executive Chef de Cuisine at Chez Henri, for two years. His next move was to Seattle, Washington, as Chef of Le Provencal. There he experienced the ingredients of the Pacific and Northwest. It was while working in Seattle that the opportunity to purchase his own fine dining establishment presented itself. Alain left Seattle at age 22 and returned to Key West where he owned and operated Chez Emile, and a small café, the Sandwich Deck. Chez Emile enjoyed a wonderful reputation for excellent food, wine and service. As busy as Alain was he found time to meet and marry his wife and partner, Celeste.

Having lived in Key West for about 10 years, Alain and Celeste decided to leave the tropical paradise and open a country inn. L’Auberge Provencale opened as a restaurant in 1981 and with several expansions now has 11 rooms for overnight accommodations and a nationally recognized restaurant. The restaurant was voted #57 in Zagat Survey’s Top 100 Hotel Restaurants in the United States. Chef Alain had been featured on PBS, Great Chefs of the East, is a James Beard Great Country Inn Chef and is in the Master Chef of America.
